CPC

Our ministry partner, The Lamb Center, serves breakfast and lunch daily to the poor and homeless in our community. The caring staff and volunteers come alongside guests as they seek restoration, shelter, employment, and progression back on their feet.

Monthly, CPC provides meals for the guests at Lamb Center.  Although pastas and breads are inexpensive, they are not good nutritional options. Because many of the guests struggle with diabetes or weight-control issues, we want to provide better options. CPC serves a hearty pot roast meal that includes vegetables and beef. The recipe is simple and there are a variety of ways you can help. You can sign up to be a driver on delivery day; meals can be provided uncooked (that’s right, we will cook it for you!); or cooked, hot and ready for us to deliver; or even dropped off frozen at any time, and we will thaw, reheat and add it to the meal delivery whenever it’s needed.

POT ROAST RECIPE:

Ingredients:

3-4 lb. pot roast (I prefer a rump roast; it’s leaner, less fat)

2 pkg. Lipton Onion Soup mix

2 small bags of red potatoes, washed + cut as needed

2 small bags of baby carrots

1 12 oz. can Coke “classic”

1 Cooking bag

1 Disposable heavy-duty aluminum pan

Instructions if delivering Uncooked: Put roast in cooking bag. Sprinkle with onion soup mix and veggies. Do NOT add the Coke. Close bag and place in a heavy-duty aluminum pan. Bring Coke and pan with bagged ingredients to CPC by 7:30am on the third Tuesday, or bring it to church with you on Sunday. We will cook it for you!

Instructions if Cooking: Put roast in cooking bag. Sprinkle with onion soup mix, add the Coke and veggies. Place bag and contents in a heavy duty aluminum casserole pan. Close bag and then cut small hole in bag. Cook for 3 hours at 350 degrees. Cover with foil to keep warm. Deliver hot on the third Tuesday before we depart at 10am. If Freezing: Let stand to cool & freeze. Bring to CPC, label and put in the kitchen freezer. We will thaw and reheat when needed.
